Bigos, a rich and rustic stew known as the "pride of the Polish table," is made with sauerkraut, cabbage, wild mushrooms, smoked meats, and aromatic spices. It is a dish that deepens in flavor over time, and in meaning over generations.
In this hands-on class, you will chop, sauté, and simmer the vegetables, learn how to layer flavors, balance acidity, and adapt the original recipe to a vegetarian version. We will also explore the history and cultural roots of bigos, from foraging to festive gatherings. Different recipes and sampling will be provided.

Instructor will provide the following:
Handouts with recipes, recipe ingredients, Bigos to sample and take some home.
Students are asked to bring:
- cutting board
- chef‘s knife
- apron
- tupperware for samples
- wear closed toe shoes
Skill Level
No experience required.
Age Recommendation
Students ages 16 and older are welcome to attend this class. Students ages 16 and 17 may attend without a parent/guardian in attendance as long as MMFS is provided with written parental permission by email to info@marinemillsfolkschool.org.
