Polish soups are more than starters, they are soulful, nourishing, and steeped in tradition. In this class, you will learn to make three vegetarian soups: Kapuśniak, a tangy sauerkraut-based soup layered with earthy vegetables and warming spices, Barszcz, a vibrant beet broth served with delicate mushroom-filled dumplings called uszka, and a Pickle soup, a hearty soup made with salt-brined dill pickles. We’ll explore fermentation, broth-building, and thoughtful presentation while sharing stories of Christmas Eve dinners and everyday comfort. Recipes—including meat adaptations—will be provided, along with generous sampling and cultural context.
